Blueberry Bowl with Blueberry Ice-Cream
Ingredients
ICE CREAM
2 cups (310g) fresh blueberries
1 avocado
1/2 cup (125g) coconut yoghurt
1 teaspoon vanilla essence
1/2 cup (150g) rice malt syrup
1 teaspoon maca powder
FOR THE BOWL
2 large frozen bananas
1 cup (155g) fresh blueberries
1 tablespoon acai powder
1 cup (250ml) coconut water
TOPPINGS
2 tablespoons flaked coconut
1/4 cup fresh blueberries
1/2 cup granola of choice
1 pear cheek, sliced
2 tablespoons cacao nibs
For the ice-cream: place fresh blueberries, avocado, coconut yoghurt, vanilla essence, rice malt syrup and maca powder into a blender and blend until thick.

For the bowl: place frozen bananas, blueberries, acai powder and coconut water into the blender and blend until smooth.
Transfer mixture between 2 bowls and top with a scoop of ice cream, flaked coconut, fresh blueberries, granola, sliced pear and cacao nibs.
