1 tablespoon chia seeds 1/2 cup (125 ml) coconut water** 3 x 125 g punnets fresh blueberries 1/2 avocado 1/2 frozen banana 1/2 cup (125 ml) coconut yoghurt 1 tablespoon LSA 1 tablespoon lemon juice
Mix the chia seeds and coconut water together in a small bowl. Set aside for 10–15 minutes, until the seeds absorb the liquid and swell.
Combine the chia seeds and the remaining ingredients in a blender and blend until smooth and creamy.
Pour into glasses and serve immediately.
