Watermelon, Mint & Feta Salad
Ingredients
4 tbsp balsamic vinegar
60g (1/4 cup) olive oil
1/4 tsp salt
800g watermelon, thin sliced
1/2 small red onion, finely sliced
300g (2 cups) fresh blueberries
100g (1/2 cup) feta, crumbed
30g (1/2 cup) mint leaves, to garnish
Place balsamic vinegar, oil and salt into a small glass and whisk with a fork. Set aside.
Arrange watermelon, red onion and blueberries in layers on a serving platter.
Top with crumbed feta, a few shakes cracked pepper and drizzle with dressing.
Garnish with mint and serve.
