Blueberry Balsamic Vinaigrette
Ingredients
1 punnet fresh blueberries
1/2 cup water
1/3 cup balsamic vinegar
1/4 cup extra virgin olive oil

Place fresh blueberries in a small pan over medium low heat. Cover with water and allow them to simmer until the blueberries soften and burst. Cool blueberries to room temperature.

Pour cooked berry mixture into a small jug and add balsamic vinegar and olive oil. Blitz mixture with a hand held blender until vinaigrette forms.

Serve over a simple salad.
