Bagels with Vanilla Bean Cream Cheese & Blueberries
Ingredients
240g (1 cup) cream cheese
1 tbs icing sugar
1 vanilla bean, scrapped
2 tbs rosewater
4 bagels
250g (2 punnets) fresh blueberries
60ml (1/4 cup) honey
35g (1/4 cup) pistachios, crushed
Edible flowers, to garnish
Place cream cheese, icing sugar, vanilla bean and rosewater into a bowl. Using an electric beater, blend for 30 seconds or until combined. Set aside.
Cut bagels in half and toast. Place two halves on each plate and evenly spread cream cheese over each halve. Top with fresh blueberries and garnish with honey, pistachios and edible flowers.
