A new, fun quinoa blueberry salad to spice up the classic salad meal.
Place cooked quinoa in a large bowl and add the cucumber, onion, tomato, avocado, blueberries, and herbs. Drizzle over the olive oil, vinegar, and lemon juice, then season with salt and pepper and toss well.
Spoon the salad onto individual cos lettuce leaves to serve.
