Breakfast Super Bars

Quick dairy free super breakfast bar

 1 ½ cups instant oats
 1 cup quinoa, cooked
 1 tsp baking powder
  cup coconut sugar
 ¼ cup hemp seeds
 2 medium bananas
 2 eggs
 2 generous tsp peanut butter
 ½ lemon, juiced
 1 tsp vanilla extract
 ¼ cup goji berries
 1 punnet fresh blueberries

Preheat the oven to 180 degrees.

Line a baking tray with baking paper.

In a large mixing bowl whisk together the oats, quinoa, sugar, baking powder, and hemp seeds.

In a separate bowl, mix the banana, nut butter, eggs, lemon juice and vanilla.

Pour the wet ingredients over the dry ingredients and mix.

Fold in the goji berries & blueberries.

Spread mix on a lined baking tray and bake for 25 – 30 minutes until golden brown.

Once cooled, slice into bars to serve.
