Blueberry Spiders

blueberry, lemon shake for endless fun

 225 g (1 1/2 cups) fresh blueberries
 110 g (1/2 cup) white sugar
 3 cups ice cream
 1 litre lemonade

Place blueberries, sugar and half a cup of water in a small saucepan over a high heat. Stirring constantly, bring to the boil and reduce heat to a low simmer for 5 minutes.

Remove from heat and strain through a fine mesh sieve placed over a bowl.

Using a spatula or spoon press blueberries through sieve to remove all additional juice.

Discard blueberry seeds and skin divide juice evenly between 4 glasses. Add scoops of ice cream to each glass and top with lemonade.

Serve immediately.
