Watermelon Pizza with Blueberries

Try a fun, fruity and healthy version of pizza with our watermelon pizza topped with blueberries!

 125 g fresh blueberries
 ½ cup coconut yoghurt
 1 tsp honey
 1 large round slice of seedless watermelon - 2.5cm thick cut from the centre of the melon
 1 kiwi fruit, skin removed and sliced
 1 small blood orange, skin removed and segmented
 1 tbsp cacao nibs
 1 tbsp goji berries
 2 tbsp torn fresh mint leaves
 Assorted edible flowers for decoration

In a small bowl combine yoghurt, honey and vanilla.

Spread yoghurt mixture over watermelon.

Decorate with kiwi slices, blood orange segments, fresh blueberries, cacao nibs and goji berries.

Top with fresh torn mint and edible flowers. Cut each slice into 8 wedges. Serve immediately.
